Coffee roastery. Retail shop. Café. Barista school. Online shop. Jennifer and Tommy cover all the bases of coffee pleasure, and Ponaire's steady, sure progress over the last sixteen years has been a model of a specialist Irish artisan food company developing organically, environmentally, wisely.

The foundation of their success is their sure and certain skills as coffee roasters. Through their nomadic existence, first in Tipperary town, then in Annacotty, then back to their custom-built base in Newport, their roasting skills have only ever gotten better. 

Ponaire has always understood the truth about coffee, as spelled out by Michael Pollan: coffee works as part of our lives because of its “ability to change our consciousness in desirable and useful ways.” 

The coffee roaster, then, is actually a shaman, extracting both the deliciousness and the consciousness-altering part of the coffee bean, taking us on a journey that most of us embark on every single day of our lives. Coffee roasters, therefore, are our modern priests.
