When Mary and Anya first began to sell their Joyce Country Breads, they riffed on a line from the legendary Kate Bush song, Hello Earth, in their first instagram post: Hello World! they wrote

And the world sat up and paid attention, and the Joyce Country Bakery was up and running.

Mary and Anya have followed the modern route to market: hatch your plans and sketch your dreams, start with a trestle table at the market, get to know your customers, make local deliveries, then hunt for some bricks and mortar that you can call home. 

That home became a reality when they got the sign over the shop and opened up to customers in September 2021, and promptly sold everything they had baked: Hello World!

But the reality actually began in 2015 when they first met, so the journey has allowed them to polish their skillset, and has allowed them to conceive something really special. Who else makes a nettle and lemon mascarpone cake, or masala-chai carrot cake? Who else bakes a rye and Borodinsky sourdough? Their sourcing of other supplies for the shop is equally inspired, for who doesn’t need some good muddy carrots from Cahermashculeek, and who doesn’t want a taste of their Mayo sandwich, made with Dozio’s mozzarella, Clonbur kale pesto and beefsteak tomato?

It’s impossible to exaggerate the importance of such a creative bakery and shop opening in a small Galway town, in the Gaeltacht, between the loughs, in the heart of Joyce’s Country. The world will be making it’s way to their door, eager to say hello.
