Paul and Claire Deevy have always been masters at creating the most elemental sense of welcome and friendship in their lovely country house, Richmond House, just outside Cappoquin.
There is the blazing fire in the hearth in the sitting room to welcome you. There is a hot cup of good tea with freshly-made scones and cakes when you arrive. And then there is the promise of a beautiful dinner cooked by Mr Deevy, and served by gracious ladies in the charming dining room – roast pepper and tomato soup to begin; smoked chicken breast with olives and avocado; sirloin of beef with champ and black peppercorn cream; hake with potato scales and courgettes; Michael Murphy’s lamb with rosemary jus; local raspberries with softly whipped cream; hot chocolate fondant with chocolate sauce.
The cooking is generous, earthy, and true, the work of a wise and mature cook, who aims to please with every taste
Mrs Deevy, mentime, is one of the most gracious and modest hosts and, whilst she is rigorously professional, she runs Richmond House with calmness and grace. So, head back to Cappoquin, and reacquaint yourself with this most treasured friend, this bastion of hospitality.
