You have got to love an Italian restaurant that makes green pasta especially for St Patrick’s Day. But whatever day of the year it is, La Collina’s fresh pastas will always be apt and aptly delicious, the result of a patient perfectionism that singles out this Salthill landmark. La Collina’s food works because they understand the Italian way of making cooking an act of curation, as well as an act of creativity, so the cooking is both deep-rooted and authentic. The pizzas are no slouch either, and here is a team, in both the kitchen and at front-of-house, who really do put their heart into it. The result, as you can well imagine, is that it can be hard to get a table here at weekends, so make sure to book and don’t risk being disappointed. Wonderful, welcoming service brings the La Collina equation to a happy conclusion.
