Grow HQ’s Wasted Supper Club sounded like a fun night out, a chance to get high whilst enjoying the smart vegetarian food from this inspired crew. However, the Wasted bit of the evening was in fact all about food waste, and how you can use scraps – fermented potato skins; fish bones; wind-fall apples; lemon skin; cucumber water – to utterly delicious effect. The HQ team, with chef Conor Spacey, produced plate after plate of astonishing food, utilising the things we all chuck out – celeriac skin; pumpkin flowers; pepper seeds; kohlrabi leaves – and in doing so they created one of the most significant modern food events in modern Ireland. It’s proof that the visionary hunger of Michael Kelly and his team is really just getting into gear, and needs to be replicated in every corner of Ireland. And, as well as saving the planet, JB Dubois and his team also make the best omelette in Ireland.
