For 13 months we have laboured over how to describe the best golf links, and the best traditional pubs. We hunted down the best modern B&Bs, and the best castles to explore. We dug deep into the history and culture of the country, and we also kept our antennae open for the best new restaurants, and for who was making the best pizzas in Galway and the best Japanese food in Cork and the best Mexican cooking in Belfast. When we had finished, we had 2,000 entries, and 424 pages of text, and HarperCollins gave it the by-line, The Insider's Guide To Ireland.
We hope the book acts as a portal to all the brilliant people and beautiful places we have discovered, and attempted to describe. It's been an illuminating and thrilling journey for us, and we hope that everyone has as much fun discovering the best of Ireland as we did.
