As Phibsborough slowly morphs in Hipsborough, Two Boys Brew is the crucial bridge between the old Dublin and the new.
TBB is a great room – walk in the door and the style and the shape and the sounds will make you think you have walked into a rooftop garden party. Young coffee hipsters are on hand to take care of your order and to help you decide if today’s brew should be a Chemex, a filter, or an Aeropress. The TBB brews are roasted by 3Fe, whilst the juices are courtesy of Sprout, so they know how to source properly, and they know how to do justice to their ingredients: my flat white was textbook latte art. Craft beers and ciders and wines are promised in the future, and guest roasters are welcomed regularly.
When I get there late on a Saturday, the room is filled with people eating brunch, even though it’s only an hour ‘til they close.
In the new Hipsborough, folk eat Brew Baked Eggs for brunch, a vivid meld of soft baked eggs with pepperonata, goat’s cheese and homemade dukkah. It is delicious, and at just under €11 it’s good value for your money, and will work whether you arrive at TBB for breakfast or a late brunch. Of course, it’s served in a cast-iron pan: we are in Hipsborough, remember.
The menus ring out all the modern global brunch staples: Avocado mash with feta; sweetcorn fritters; bircher bowl; coconut granola; super salad with tri-colour quinoa; Creole chicken burger. The counter is host to buttermilk scones; peanut butter cookies; Brew Boys brownie; raspberry ricotta cake. The team have thought long and hard about what they want to cook and serve in TBB, and you suspect they like this food just as much as the customers do. There’s a simple reason why the place is packed late-afternoon: everybody wants a taste of Hipsborough.
