Exactitude and instinct are, at the best of times, a pretty good working combination.
But when you bring exactitude and instinct together in a food truck, you can park that food truck anywhere you like, and you can be in no doubt that food lovers will come running from far and wide for a taste of what your E&I combination cooks up.
To see this in action, take yourself off to the edge of Ireland’s only fjord, at Killary Harbour near Leenane, in Connemara. Pull off the road into the car park of the Killary Adventure Centre and present yourself at the food cart that is named Misunderstood Heron. Depending on the day, either Kim (Exactitude) or her partner Reynaldo (Instinct) will be behind the counter of the truck. The blackboard menu will offer mussels and lamb; smoked salmon with pickles; pasties and quiches; coriander felafel with yogurt; and sweet things like blueberry cake, or apple pies, and Cloudpicker coffee.
Now, here’s the thing with Misunderstood Heron: whatever you order will be delightful and delicious and will demonstrate exactitude and instinct, in abundance. 
Those pasties, for instance, have the signature of someone who understands empanadas. The mussels have the signature of someone completely at ease in the kitchen. The coffee is worth driving 100 miles for, it is so excellent. 
You sit outside at a picnic table, happily staring down the mouth of the fjord, and you thank your lucky stars that you are here, eating cooking of such excellence. We guess you could call it Fjord Food, but really what you get at Misunderstood Heron is simply Fantastic Food.
