In the tenth edition of the Irish Food Guide, which is currently in production, we assert that Mrs Myrtle Allen of Ballymaloe House is the most significant, creative individual in the history of the Irish State. We have tried, in this video portrait, to capture some of the fundamentals of Mrs Allen's philosophy, which has been exhibited ever since she opened the doors of Ballymaloe House in 1964. Part of the film shows three generations of the Allen family working together to set up the traditional Sunday evening buffet in the restaurant.
