Ms Caviston and Mr Willis are some team – smart, calm, ahead-of-the-curve, sociable, hip – and they have created a don’t-miss! destination on the main drag of pretty Greystones thanks to great fish cooking and a superb shop.

The competition gets hotter every year, but County Clare consistently boasts one of the most quixotic, stubborn and intriguing collection of artisans, chefs and hospitality providers, so it pips out Kilkenny, Tipperary and Mayo, all of whom showed remarkably cohesive food cultures for us all to enjoy
