The Chinese city of XI’An has always been a hugely important centre of food, trading and culture, the longest serving capital of China, a major destination on the Silk Road, and the city at the epicentre of the Tang Dynasty. No surprise, then, that in XI’AN Street Food you will find some of the greatest restaurant dishes you can eat anywhere, in particular XI’An’s speciality biang-biang noodles – made by hand-ripping the wheat noodles – and the unique jian bing flatbreads, extraordinary crepe-style flatbreads packed with luscious fillings. Of course, there are many XI’AN Street Food classics – the powerfully scented Qishan soup noodles; the moreish dumplings, to be dunked into a richly viscous sauce with black vinegar – and at the heart of XI’An Street Food’s Home Cuisine dishes is the restaurant’s unique Xi’an use of chillis and spices, with their powerful depth of flavours of cumin, cardamom, Sichuan peppercorns, cloves and star anise.
