It is because of people like Brid Torrades, and thanks to great dining destinations like Osta, that Sligo town and county have a thriving food culture today.

This hasn’t happened overnight. We first enjoyed Ms Torrades food in 1990, when she cooked in Collooney. She was already producing superb food, characterised by a precise technique, and an instinctive generosity, and those qualities have always been her twin signatures. But in addition to cooking great food, Ms Torrades is also a political and cultural activist, organising, creating, promoting, canvassing, all for her beloved Sligo. Her unseen work is every bit as important as her visible profile, but of course what arrives on the plate is what matters to the customer, and this is where Brid has never missed a beat in a career extending over 30 years. She and her team put gorgeous things to eat on numerous plates each and every year, and we are all grateful for her work ethic, and her culinary aesthetic. Brid torrades is a true food hero.
