Johnnie and Maria are a mighty team of talents. Working together, thanks to the combination of her sublime cooking and his capacious skills as front-of-house, they have gifted Oughterard with the destination dining address that the gateway town to Connemara has long needed. They have done it by creating a space where you feel welcome at any and every time of day, and by creating a space where they can show the trueness and unpretentiousness of their work. The Greenway works because it is a real charmer: Maria’s cooking has a quiet chutzpah, a quiet confidence that makes for sheer deliciousness. Her food always tastes both homemade and handmade, the work of a chef seeking to bring out the innate and true flavours of her ingredients, whether she is cooking an under-rated fish such as ling, or baking a fudge cake. In the Greenway, the simple things – fresh potatoes; root vegetables; properly cooked steak; ice creams – taste as if newly discovered and freshly minted, the sign of a gifted, meticulous chef. Johnnie and the team know just how good the food is, and it gives the team utter control and confidence in their work.
