Paula and Simon are the sort of cool guys who know how to make us all feel good.
Walk into the craft shop and gallery of The Wilds and the seemingly effortless – but indubitably effortful – bricolage-thrown-together-in-a-moment style means that you crave every single covetable object, and want them shipped to your own gaff, post haste, in the hope that you might live in a place as effortlessly cool as The Wilds.
The same sort of sprezzatura chutzpah is evident in the café, right from the meticulous sourcing of ingredents – O’Neills bacon, Plur artisan breads; Bean & Goose chocolates; Gorse Farm organic greens, to name just a sprinkling – though to the careful curation of the excellent coffee and the artful plating of the food itself. All of this careful consideration lifts our hearts and souls, which means The Wilds is both an oasis, and an idyll.
It takes the work of true aesthetes, people with a deep and true sense of aesthetic ambition, to fashion such a singular place.
Of course, Enniscorthy has a by-pass, nowadays. But you would want to be crazy to by-pass The Wilds.
