Salt is well named.
Here is a kitchen that knows how to maximize flavours, whilst also holding them in balance. And when you ally those kitchen smarts with excellent ingredients that have been rigorously sourced, then you know why this pretty, poster-bedecked room just south of the River Lee, is always so busy.
We like the fact that they take care of the small details. A bacon bap on brioche is a simple thing to do, but a difficult thing to do well. In Salt, they nail it because the bacon is cooked to exactly the right level of crispness, so there is a perfect textural contrast with the yielding bun, the sweet relish, the crisp leaves and an oozing fried egg. Simple, and perfect, and bang on.
Their culinary ethos is proudly European – salad of Puy lentils; Spanish-style eggs with bell pepper confit; a casserole of baked eggs on spinach and mushrooms with melted brie; tagine of chickpeas with sultanas and roasted almonds. This is the kind of cooking you can eat everyday, and we’re confident that there are lots of people living in and around Victoria Road who do just that. Weekend evenings allow them to show their style, with blanquette of chicken; beetroot carpaccio; moules frites, entrecote frites; crispy calamari, and it makes for food that is confident, unpretentious, and quietly satisfying. Salt, Food & Wine is perfectly seasoned.
