He understands the value of tradition, and the fact that the local Irish butcher’s shop is not just one of the glories of Ireland’s food culture, it is also a foundational cornerstone of every Irish community, and has been for decades.
So, Mr Grant understands his craft, and his meat, and he understands his role as the vital intermediary between the good farmer, and the hungry customer. He knows how to select, and he knows how to sell.
