The Bombay Pantry has always been hip. They were hip 20 years ago when they opened their first store, and 20 years later thay are still hip. Part of their endurance lies with their ability to innovate, whilst still holding fast to the great staples of Indian cooking. So, you may well fancy a lamb biryani for a Friday treat, but when you see the masala fries – cooked with peppers, onions, garlic, green chillies and spices – well then you are made of tough stuff if you can resist such a tasty, moreish treat. As their customer’s knowledge has expanded, the Pantry has shifted and recalibrated, introducing street food dishes, prepared foods, snacks and pantry items, superfood and vegan dishes. Their ability to grow the business – there are now 7 stores throughout Dublin – whilst streamlining and perfecting their service is a lesson in how to run a successful food business. The Bombay Pantry has made life so much better for so many people, and their achievement is truly mighty.
