For almost two decades, Gearoid Lynch has offered a masterclass in modern Irish cooking for customers at The Olde Post Inn. At the same time, this genial guy has offered a masterclass in how to create an important local business, a business which lives off the produce of the county, and at the same time gives back to the county, surviving booms and busts by continually investing in his team and his business. Of course, the attraction of the Olde Post is Mr Lynch’s brilliant cooking, and for us he is one of the modern Irish masters, able to offer the true tastes of County Cavan in creative and distinctive dishes such as  the classic bacon and cabbage terrine; monkfish and pork belly with chicken skin; turbot with coral sauce; cherry clafoutis. Lovely rooms make it easy to make a night of it.
