The secret of organic milk lies in the grass, its quality, its diversity, its deliciousness. Conventional farming uses chemical aids to grow grass, but the organic system concentrates more on feeding the soil, thereby creating pastures that are diverse, and deep-rooted. Organics allows for more biodiversity in what grows in the field - organic farmers actually prefer their grassland to be full of clover and other plants, because they know it makes the milk from the cows grazing on the pastures taste better. The grass in our film about The Little Milk Company almost glows on screen, and we see cowslips and a harmony in nature that eventually comes through in the flavour of everything they produce. This week we visited three organic farmers who produce milk for TLMC, and also filmed at Knockdrinna cheese, where Helen Finnegan and her team transform that golden liquid into cheese through a process that makes time almost stand still.
