Diva Pound Cake
1lb butter
1lb sugar
1lb eggs (about 8-9)
1lb flour
Beat the sugar and butter together until the mixture is pale white in colour and light in texture (this takes about 10 minutes). This is essential for the ultimate lightness of the cake. Beat the eggs, one at a time, and finally fold in the flour. Don't overbeat the flour – fold until it is just incorporated.
At this point you can fold in some flavouring ingredients, blueberries or other berries, first rolled in a little flour; poppyseeds and 1-2 whole lemons, (skin, pips and all) first buzzed to a pulp in a food processor. Perhaps a jar of home-made jam. Pour into a buttered bundt tin and bake for 50 mins at 160º
If you don't have a bundt tin, you can use ordinary loaf tins, including bread or cake tins.
Lemon drizzle: Beat together 100g icing sugar with (approximately) the juice of half a lemon
